This cake is a reinterpretation of the Pauline. There is the delicate harmony between Panacotta vanilla, vanilla biscuit and crispy with salt flower but the spherification is now slipped into the heart of each Williamette raspberry.
The whole is thus easier to taste and it allows to take full advantage of each texture and taste with each bite.

Perfect balance between creaminess and lightness, softness and sweetness and light acidity, it is one the lightest cake of the range.
