This cake is the story of a harmony between a light Panacotta vanilla stabilized without gelatin, a vanilla biscuit and a crusty salt-flower, which will allow to lightly desuging the whole.

TheWilliamette raspberry spherification without added sugar brings with its slight acidity, the final touch to this cake, the lightest of all my range.

It is very important during tasting to take each flavor at the same time in order to feel all the smoothness and sweetness of each texture.

It is an ephemeral and very fragile creation because, without any fixant in the creams, only the thine white chocolate coating binds the whole, while lightly adding sugar.
