Story
Eversince I was a child, I've had a deep interest in baking cakes. Growing up in Epernay, I was raised in a foster family with two sons who shared a passion for pastry making. On Wednesday afternoons after school, if I had behaved well, I was allowed to bake a yogurt cake. Through baking, I truly began to flourish, gaining recognition from others.
Seeing the pleasure in others' eyes from my creations inspired me to continually strive for excellence. My mistakes and challenges became the driving force that pushed me to reach new heights.
PASSION
IS A DRIVING FORCE
With no strong family connections, I travelled to work for the best, whichinstilled in me a sense of rigor and professionalism.
My education was strengthened by my work and the chefs I was lucky enough to meet. I still remember one of my first employers, whom I admired for his "Meilleur Ouvrier de France" and World Champion titles.
One day, he told me: "You don't give responsibilities, you take them". I've never forgotten those words, and they became my leitmotif. I've evolved very quickly thanks to this guideline and by carefully choosing my professional entourage.
